Fig, Prosciutto, Arugula Pizza
I agree, it sounds odd. But, before you judge it –you need to try it.
I made this awhile ago (Christmas Eve to be exact) for a little festive get together at my house.
It was a huge hit! Salty prosciutto, sweet fig, fresh arugula, crispy pizza crust and smooth and creamy mozzarella cheese, and shaved Parmesan.
And, it couldn’t have been any easier.
For the vegetarians in the group (or the picky occasional meat eaters), I did make a version without the prosciutto and it was great! I’m sure the prosciutto added a little extra salt and flavor but I didn’t miss it.
I have to admit the recipe idea came from The Pioneer Woman and she lays it out very easy–step by step. Instead of re-posting the recipe on my site–I am going to do one better—I am going to send you directly to Ree’s site to get the recipe from her.
