Fun-da-Middles (and a Giveaway)–WINNER POSTED
Pardon my washed out photographs but the above photo documents my attempt at making cream filled cupcakes for my nieces, nephews and children while in Hawaii last week. And, just to let you know–my attempt was successful.
This is a good thing as I must compete with my sister in law, Cathy, and her amazing cooking so I always feel a little bit inadequate in the kitchen. I feel even worse when I am trying to cook something for her family, in her kitchen. So much pressure.
Anyway, Betty Crocker is testing out a new product, filled cupcakes in a box called Fun-da-Middles–you can’t even buy it in the stores yet and they sent me a box to sample. I took the box to Hawaii to share with the cousins. If I can’t impress them with mad cooking skills–at least I can wow them with something that you can’t yet buy in stores!
Baking the cupcakes were very simple—just as easy as any old cake mix. The cupcakes turned out light and moist with the perfect amount of cream filling in each one. They are perfect as is and would likely be too sweet if they had extra frosting on top. These would be great to pack in kids lunches or take on picnics–they are sweet and cute–but not very messy.
The best part about this baking adventure were the compliments I got from my niece Mary. I think I may have tricked her into thinking I am a baker extraordinaire.
