Soy Chorizo and Eggs Breakfast Pizza

It was a quiet morning.  Everyone was still asleep and I had the kitchen to myself.  It had been cleaned the night before so it was especially welcoming.  I opened the refrigerator and saw…..almost nothing.  We were out of food but I didn’t want to put on clothes and run to the store.  No, not for breakfast.   So, I decided to do what most people probably do all the time–(I know my sister in law Cathy is a pro at this)–make something out of what we had around.

Usually, I have a recipe idea in my brain, and I will run off to the store to buy all the things I need, plus more.  Kind of like “The Little Red Hen Makes A Pizza”, but she lives in a city so her options are more interesting.

This time I was taking on the challenge.

The challenge:  Cook breakfast for the family using only the ingredients we have on hand.

The result:  Chorizo and Eggs Breakfast Pizza

Luckily, I had a tube of Pillsbury Refrigerated Pizza Dough on hand, which made the pizza crust a cinch.  Once you open the roll, the dough is organized inside the tube in such a way that you don’t have to use a rolling pin.  You just gently peel back the layers and spread it out on the pan.  And, though I normally try to make my own pizza dough—sometimes, it is nice to have something quick on hand.  Not only do you save money by eating in….you get to add your own personal touches.  Ya know?

I had also never tried to bake eggs before but it worked out perfectly.  I only had two eggs laying around though, so if you make this I would suggest using about 4 eggs for more even coverage.

The kids, who are olive and tomato averse, loved this.  I think they really loved the crust which was a bit more butter-y than my normal crust.

Soy Chorizo and Eggs Breakfast Pizza
Ingredients
  • 1 Pillsbury refriderated pizza dough
  • 2 tablespoon olive oil
  • 1 tomato
  • ½ cup black olives
  • 4 eggs
  • 1 cup Trader Joes soy chorizo
  • 1 cup Cabot Sharp Cheddar Cheese
Instructions
  1. ) Preheat oven to 400 degrees and prepare pizza pan. You may need to put a little oil on the pan to prevent sticking.
  2. ) Open the tube of Pillsbury refrigerated pizza dough and gently open the layers out onto the pan. Using your fingers, spread the dough to the edge of the pan.
  3. ) Sprinkle the dough with the olive oil, and a tad of kosher salt. Layer on the toppings starting with the tomatoes, olives, and chorizo. Finally, add the cheese.
  4. ) In a separate bowl, scramble the eggs. Gently pour the eggs over the cheese covered pizza, trying to cover all part of the pizza. (I didn't do such a good job with this.)
  5. ) Bake for 8-10 minutes. Sprinkle with cilantro or avocado or both before eating.
  6. ) Enjoy!
